Modified for high altitude baking at ~5,350.
Original Recipe Yield 1 - 9x5 inch loaf
* 1/2 cup milk * 2 eggs * 1/2 cup vegetable oil * 1 cup white sugar * 3 very ripe bananas * 1/2 tablespoon vanilla extract * 2 cups all-purpose flour * 1 teaspoon ground cinnamon * 3/4 teaspoon baking powder * 3/4 teaspoon baking soda * 1/8 teaspoon salt * 1/2 cup chocolate chips (Optional)
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a blender, combine milk, eggs, oil, sugar, vanilla, and bananas. Put on high until a puree. Pour into a large bowl.
In another bowl, sift together all the flour, cinnamon, baking powder, baking soda, and salt.
Add dry ingredients to banana mixture, mix well.
Stir in chocolate chips.
Pour batter into greased pan.
Bake in preheated oven for 1 hour and 25 minutes until golden brown, an a toothpick inserted into center of the loaf comes out clean.
